Hello SUMMER!

Oh summer, what a beautiful time of the year and a very daunting time – umm, beach bods..? Yes, it is time to start improving my personal diet and shed some inches around the love handles! And the perfect way is to substitute one of my daily meals (lunch or dinner) with a nice light summer salad! Best part is the homemade dressing!! yummmm!

A light summer salad recipe topped with shrimps and a homemade dressing for a better beach bod!This quick and easy recipe is simply scrumptious! But the most charming aspect about the recipe is the ingredients, which are found hanging around the pantry in most kitchen!




Ingredients:

  1. Salad (romaine lettuce & spinach)
  2. Shrimp (1/2 to 1lb)
    • paprika, garlic powder, kosher salt, & freshly ground pepper
  3. Salad dressing
    • olive oil, red wine vinegar, garlic powder, kosher salt, & freshly ground pepper
  4. English Cucumber (seedless)
  5. Grape tomatoes (or cherry)
  6. Red onion (thinly sliced)

Directions:

Shrimp

  1. Peel & devein the shrimp, if desired. Season with paprika, garlic powder, salt, & pepper to your liking (I used about a tsp of paprika & garlic powder and enough salt & pepper to taste).
  2. In a pan on medium heat, sauté the shrimp with olive oil about 2-3 minutes on each side until they’re totally pink & opaque.
  3. Set aside to cool.




Salad dressing

  1. In a small jar – big enough for the desired volume, pour the olive oil in first and then the red wine vinegar, which is half the amount of the olive oil (you’ll be able to visually see the proportions due to the separation). 
  2. To your liking, add in garlic powder, salt & pepper. If you’re fond of onion powder, you can definitely add that. I’m just not a big fan. 🙂
  3. Shake and mix thoroughly before each use.

Salad

  1. Pick your greens. I picked romaine lettuce and baby spinach.
  2. Add your toppings, whatever you like on top of your salad. In this case, I went with thinly sliced red onions, cucumbers, and grape tomatoes.
    Recommendations:

    • Add fresh fruits (chopped apples, sliced strawberries, grapes, blueberries, and etc.)
      **I love adding fresh fruits, especially during the summer!**
    • Dried fruits, nuts and seeds (cranberries, raisins, toasted almonds/walnuts, and sunflower seeds)
    • Hard boiled egg
